Day 12 – Sunday
Another day logging major hours at the gym. But, we got to enjoy ourselves a bit before going in today!
Happy Mother’s Day to all you mommas out there. Hope you all had an awesome day. I woke up early and made all sorts of Paleo yummies for us to enjoy.
I made the Simple Blueberry Lemon Birthday Cake recipe from Paleomg.com and it was sooooooo good! Super lemony and light and very delicious. I made it into 2 small loaves. So cute. Check out that garnishing…I’m a bamf.
I made my first batch of homemade Coconut Butter today too. Literally the easiest thing EVER. Buy coconut flakes, put in food processor for 10 minutes. BAM. done. So awesome and tasty.
I’ve been missing jelly during breakfast so I also cooked up some Raspberry Blueberry Jam. Again, super simple to make. I used organic frozen raspberries and organic blueberries, some honey and lemon juice. Throw it in a saucepan and let it cook down. Yum.
Finally, the biggest pain in the ass, but the best, naughtiest, Paleo TREAT ever…(it’s definitely a treat. not something to eat everyday) SAMOA mini DONUTS from The Urban Poser. If you’re low on time, don’t make this one. If you want something that looks super impressive, and is fucking delicious, make this one. You can find the recipe HERE. The really cool part about this is that the Urban Poser reposted my Instagram photo! I got tons of compliments on my photo. So exciting. And nerdy.
